Abstract

Papaya is one of the main commodities of the fruit group which is prioritized for research and development in the research area of Puslitbang Holtikultura. Papaya seeds have the potency to produce 30-34% oil with nutritional properties similar to olive oil. This research applied a method of solid-liquid extraction with n-hexane solvent which aims to determine the fat content and fatty acid composition contained in papaya seeds and to investigate the effect of solvent ratio with the material and time of extraction on the amount of oil obtained. Various ration of solvent-sample (7:1 mL/g, 10:1 mL/g, and 15:1 mL/g) was introduced into different flashes, with various time of extraction (60, 120, 180 minutes) at constant temperature of 65°C. The extract solution was then distilled to separate the solvent from the oil. The results showed that increasing time of extraction increased the amount of oil obtained. The highest amount of oil was 39,42%, obtained at the conditions of 15:1 mL/g in ration of solvent-sample and 180 minutes of time of extraction.
